A rich and textural wine displaying lovely aromas of tropical fruits with a hint of apple and spice.  The palate is mouth-filling and generous with excellent length and harmony carrying the fruit to a full, clean finish  A marvelous wine match with any meal and is best served slightly chilled to allow the full texture of the wine to flourish.

Viticulturist Notes

The fruit for the Basilisk Chardonnay was sourced from the Goulburn Valley on the vineyards neighbouring the winery.  This region has long, warm, sunny days and mild evening temperatures which are perfect for the growing of good quality Chardonnay.  The grapes were harvested during the cool of the night to maintain fruit freshness and then gently pressed to minimise phenolic characters.  Juice was settled cold and after racking, inoculated with natural yeast to further enhance varietal character. 

Wine Harvest Notes

The summer of 2012 / 2013 was hot and dry - the hot weather ripening grapes out of the 2013 vintage early and the dry spell allowing the sugars to develop fully.  Balancing sugar and acid was tricky this year, however the vintage ended with a bang with great flavour ripeness being achieved at the last minute.  2013 will go down as a cracking year, with excellent overall quality and magnificent, vibrant colour in the reds. 

Food Recommendations:

A rich, full bodied Chardonnay that is best enjoyed with foods such as roast chicken, rich seafood or roasted duck.  This wine is a great all-rounder and will compliment most styles of cuisine.
