A delicate yet remarkably complex wine produced from select parcels of fruit from the cool climate Strathbogie Ranges of Central Victoria.  Pale in straw colour, this wine is filled with aromas of passionfruit and pineapple with subtle hints of gooseberries and citrus.  The palate displays appealing tropical fruit flavours with an underlying lemon and lime zing. With tremendous length of flavour and a long lingering finish, this is a true “food” wine which pairs well with fresh seafood and lightly grilled chicken dishes.

Viticulturist Notes

Fruit for the Basilisk Sauvignon Blanc was harvested from a select vineyard within the Strathbogie Ranges during March 2012.  The fruit was crushed, pressed and cold settled before being inoculated with an exciting new yeast strain, Alchemy 1.  The fermentation was conducted at cool temperatures ranging between 10-12C, with the fermentation period taking 3 weeks. The wine was then fined, cold stabilised and filtered before being bottled young and fresh.

Wine Harvest Notes

The highly anticipated 2012 vintage has produced some excellent wines with beautiful balance and length of flavour.  The harvest was short and fast with whites and reds ripening early in the season, and good Autumnal weather to follow.  Overall the quality is remarkable, and the resulting wines will live on for many years to come.

An intense and lively wine, the 2012 Basilisk Sauvignon Blanc is best enjoyed young.  Partnered with a light chicken salad or gourmet seafood pizza, this wine lends itself enthusiastically to the start, middle or end of any meal.
