Jock’s Cabernet is much like the man – smooth, no-nonsense and will fit right in at any occasion. This wine is a dense inky-purple colour with an enticing nose displaying aromas of ripe blackberries and cassis with a slight hint of capsicum.  The palate is elegantly structured with fruit intensity, integrated spicy oak and above all, finesse.

Viticulturist Notes

The highly anticipated 2012 vintage has produced some excellent wines with beautiful balance and length of flavour.  The harvest was short and fast with whites and reds ripening early in the season, and good Autumnal weather to follow.  Overall the quality is remarkable, and the resulting wines will live on for many years to come.

Wine Harvest Notes

The grapes for this Cabernet Sauvignon were picked and crushed during the cool of night, thus ensuring the retention of varietal character, while modern winemaking techniques were employed throughout. Cold maceration of the fruit prior to fermentation helped to bring out colour and the wine’s primary varietal characters – such as blackcurrant and herbal fruit flavours. While still fermenting, the wine was transferred onto medium toast, French oak where it then spent several months, giving the wine a subtle enhancing structure and spice character adding further dimension to the overall style. The inclusion of some high quality Central Victorian fruit in the blend has improved both the colour and flavour profiles of the wine.



Food Recommendations:

A classic partner for grilled rib eye served with a pepper sauce. Jock’s Cabernet Sauvignon also pairs well with rich tomato based pasta dishes.
