McPherson Family Series Cabernet Sauvignon 2014

Varietal: 100% Cabernet Sauvignon
Alcohol: 14%

Jock's Cabernet is much like the man - smooth, no nonsense and will fit right in at any occasion.  This classic Cabernet exhibits rich ripe berries and mint bouquet, with a full flavoured, fleshy, fruit laden palate.

Viticulturist Notes

The grapes for this Cabernet Sauvignon were picked and crushed during the cool of the night, ensuring the retention of varietal character, while modern winemaking techniques were employed throughout.  Cool maceration of the fruit prior to fermentation helped to bring out colour and the wines primary varietal characters - such as blackcurrant and herbal fruit flavours.  While still fermenting, the wine was transferred onto medium toast, French oak where it then spent several months, giving the wine an enhanced structure of subtle spice.  The inclusion of some high quality Central Victorian fruit in the blend has improved both the colour and flavour profile of the wine.

Wine Harvest Notes

The growing season in 2014 presented some challenges including frost in late 2013 and extreme heat in early 2014.  Once harvesting began in late January we were pleasantly surprised by the quality of the fruit and resulting wines.  Yields were down but quality was up this year.  Whites have good varietal character, with great flavour, whilst the reds have beautiful colour and flavour intensity.

Food Recommendations:

A classic partner for grilled rib eye served with a pepper sauce.  Jock's Cabernet Sauvignon also pairs well with rich tomato based pasta dishes.
